Another Banana Bread recipe? I think so!

Growing up, baking banana muffins for my post training snack was the only way my mum could get me to eat bananas. Fast-forward 10 years and I’m still doing exactly the same.

During lockdown it appears the rest of the world has jumped on board and we’re all at home baking banana bread. Who knows if that’s because all there are in the shops are bananas, or if people are under the impression they are baking a ‘healthy’ cake. But let’s face it – the healthy ones really aren’t the best ones! I caught up with @cassiesbakes_ to find out her all-time favourite recipe, and WOW it tasted good!


You will need:

3 Large Ripe Bananas 125 g Unsalted Butter/Stork 150 g Light Brown Sugar 250 g Self Raising Flour 1 tsp Baking Powder 3 Medium Eggs 1 tsp Vanilla Extract 150 g White chocolate chips


Method:

1. Preheat your oven to 180C/160C Fan and line a loaf tin with parchment paper 2. Mush your bananas up till they are soft 3. In a new bowl, add your Butter and Sugar and beat till smooth and light. 4. Add in your Eggs, Banana and Vanilla and beat again 5. Add in the Flour, Baking Powder, and Cinnamon and beat again till combined 6. Fold through the Chocolate Chips and pour into the tin 7. Bake in the oven for 60-70 minutes - after 30 minutes, quickly and carefully cover lightly with foil to stop it browning too much
